La Culottée 2024
“It seems that pink is a story of Provence… Me, I’m a wine from France, so if I can’t say where I come from, I can say what wood I’m warming myself with: a beautiful vinified Caladoc partially in barrels! Welcome to my contradictions, where uprightness, structure, complexity, frivolity, gastronomic wine and aperitif wine confront each other. A teasing pink”
An elegant & fresh wine with a great tension. An unusual rosé, both complex & playful. Balance is the key world. Wine almost floral, with a good minerality & spice. Fermentation in 225liter barrels & 20HL foudre with indigeneous yeast.
Terramatter 2023
Terramatter is an unfiltered wine, produced from Alvarinho grapes which are grown organically. Intense in colour, aromatically expressive and complex on both nose and palate. The wine’s partial malolactic fermentation in chestnut barrels and an early harvest are the fundamental factors underlying its personality. This is a wine made for food pairing with its smooth and complex flavour, while also having a vibrant, fresh and slightly vegetal finish.
L’Apostrophe 2024
First vintage started back in 2015, the same year the Domaine was inaugurated. A blend of 60% Sauvignon Blanc & 40% Viognier with a stainless steel low tempertature fermentation & aged for 4 months in stainless steel before bottling. Brilliant yellow colour on appearance with a nose full of apricots & citrus. Fresh on the palate with exotic fruit, apricot and a lemony finish. Ideal as an aperitif, cooked white fish, light white meat dishes & vegetarian salads. Serve at 8°C to 10°C
Demuerte Gold 2022
A golden coupage: Monastrell, Syrah & Alicante Bouschet (Garnacha Tintorera). Elegant, sophisticated and can turn any occasion into an exquisite one. Monastrell (50%) old vines of over 30 years, Syrah (30%), & the distinguished teinturier grape Alicante Bouschet (20%) which has both the skin and the pulp red in colour. Coming from Mediterranean-continentalized climate with its rigorous dry land of very cold winters, and extremely hot summers. Planted on limestone, a thick subsoil with the presence of carbonates and a sandy surface with clay formations which are poor in organic matter but quite healthy and permeable. Low yield irrigated & dry land which also contribute to the concentration of elements inside the fruit.
Manual late harvest, in 20 kg boxes, preventing deterioration at all times. The carefully selected optimal grape bunches are subjected to delicate extraction, the must then starts its fermentation process in stainless steel tanks at 24 degrees Celsius and macerated for 21 days before its malolactic conversion. Aging is done in French Allier oak barrels for a minimum period of 14 months. Appearance is deep cherry red color with a garnet rim. Nose is reminiscent of ripe & liquorous red fruit, a scent that is also full of spices such as pepper, cloves & nutmeg which makes for a very suggestive combination. Palate is smooth, full bodied with ripe tannin and a silky texture. Serve at 16-18ºC. Certified Vegan.
Les Hauts de Guillaman 2019
A single-vineyard Merlot aged in barrels, complex and
powerful, with aromas of ripe red fruits, roasted cocoa
beans, vanilla & spices. Full-bodied, dense and round on
the palate with melted tannins, beautiful length with
menthol notes on the finish.
4 to 6-week fermentation with full skin contact maceration, gentle pressing with only indigenous yeast. Malolactic fermentation followed by 18 months aging in French oak barrels.
Ideal pairing with a duck breast grilled over a wood fire, poultry marinated with morels, and a BBQ roasted camembert stuffed with apricots & almonds.
Malayeto 2020
Malayeto was the first wine to be launched in the series of terroir-focused wines from Fitero, the only place in Navarra located in the Iberian Mountains, just on the geological border between the Sierra de Cameros mountains and the Ebro river basin. The Malayeto parcel is found at a latitude of 42.05° and an altitude of 520 metres, the soils are rocky and stony, with variegated clays, limestone and composite soils.
These characteristics, in conjunction with the continental climate, mean that the roots have to burrow deep into the soil to find water. The aim is to keep on improving the biodiversity of this vineyard, as well as taking active steps to recuperate the native flora. Along with sustainable viticulture practices, these factors define the unique terroir of a sole plot of land. Alcoholic fermentation in 3.500-litre wooden tanks, using just indigenous yeast, malolactic fermentation and 9 months ageing in 300-litre 2 years used French barrels. 2 months refinement in 4.500-litre wooden tanks.
