Region

Languedoc-Roussillon, is one of the largest and most diverse wine-producing regions in France. It is located in the southern part of the country, along the Mediterranean coast. It has a long history of viticulture and winemaking, and it’s known for producing a wide range of wine styles.

This region benefits from a Mediterranean climate, characterized by hot, dry summers and mild, wet winters. The diverse geography includes coastal plains, rolling hills, and mountainous areas, which create a variety of microclimates and soil types.

Cabardès

Cabardès is situated in the western part of the Languedoc-Roussillon region, not far from the city of Carcassonne. The vineyards are spread across the foothills of the Montagne Noire (Black Mountain) and benefit from a variety of microclimates due to the region’s diverse geography.

“Les Dissidents”

The term “Les Dissidents” is a term in French used to refer to the winemaker who opposes or dissent from the established norms, authority, or mainstream views within the Cabardès AOP.  Les Dissidents challenge the status quo and the established rules and policies.

100% Vermentino and declassified as Vin de France this is part of the limited bottled ” Les Dissidents” range. Following a number of experiments, a whole instinctive range comprised of micro-cuvees and varietal wines, prohibited by the appellation, in truly exclusive, libertarian style. What the winemaker believe to be the best varieties of the soil, this unclassified range of French wine defies the institutions, their regulations and conventional wine.

Vinification

Yield of 60 hectoliters per hectare with fermentation in stainless steel tanks at 18°C without malolactic fermentation and ageing for 3 months on fine lees.  A very pleasant Vermentino which brings its freshness, white peach, linden blossoms & tangerine. The attack is tense but with a nice sweetness in the middle of the mouth with a long finish.

Ideal serving temperature –  8°C.

Once orders are placed, please allow 3 working days for delivery. In exceptional cases of urgency, please call +35679539865 to check whether a quicker delivery can be arranged.

Once you place your order, the system will send you a confirmation email containing the details of your order. Please check that those details are correct.

Is there a minimum order?

There are no minimum orders however, there is a minimum order if you want to benefit from free delivery. For free delivery, the minimum order is €50.00.

Do you deliver?

Yes, we offer a delivery service to the address you have indicated in the order form. Orders for a box €50.00 or more benefit from free delivery. If the order is for less than a €50.00 a delivery charge may be applied, and will be calculated and added to your order on check-out.

Do you refund?

All sales are final, and no refunds given. The only exception is if there is a fault to the wine.

How do I store the wine?

It is up to you to properly store the wine after receiving delivery. The recommended storage is in a dark place, away from movements or vibrations, and at a temperature between 10 and 15 degrees Celsius. This temperature varies from the recommended serving temperature, which varies according to the type of wine you will be consuming.

Do you stock vegan or no-added-sulphur wines?

Yes, at Holy Wines, we stock wines which contain no added sulphur, and which are vegan. These are indicated in the product information on this website.
