The natural sweetness in these wines is achieved through techniques such as halting fermentation early, using fully ripe grapes, or allowing grapes to be affected by noble rot (Botrytis cinerea)—a beneficial fungus that concentrates sugars and deepens complexity.
None of the sweet wines featured here contain added sugar or grape juice, ensuring authenticity in every bottle. This selection also includes an ice wine, made from naturally frozen grapes harvested and pressed while frozen, as well as fortified sweet wines, such as Port, where fermentation is stopped by adding grape spirit (brandy) to retain natural sweetness.
