Domaine Guillaman

Dominique Ferret comes from a long line of winemakers, his family has been producing wine for over two centuries, and he proudly represents the sixth generation. He began working in the vineyards alongside his grandfather at the age of 15, tending to what was then a 15-hectare estate. In 2000, Dominique met Stéphanie, the granddaughter of a local winegrower, and their shared passion for viticulture led them to begin bottling their own wines. Their very first vintage earned a Gold Medal in Paris, marking the beginning of a remarkable journey.
Since then, the domaine has steadily expanded, and in 2009 they built a new, modern wine cellar to support their growth and ensure quality at every stage of production. Today, the estate covers 300 hectares, 200 planted with vines and 100 preserved as forest to support biodiversity, and produces one million bottles annually, distributed in 31 countries worldwide.

Sustainability is at the core of everything they do. From vineyard to cellar, their goal is to produce wines of character while minimizing environmental impact. They have been certified High Environmental Value (HVE) Level 3 since 2017 and continue to adopt responsible, eco-friendly practices across the estate.
They use natural fertilizers like vine shoots, field beans, and manure, along with biocontrol methods and sexual confusion for pest control—eliminating synthetic chemicals. Biodiversity is promoted with 15% of land set aside for ecological use and 60% of vineyards covered with permanent vegetation such as meadow grass and alfalfa. Each year, they plant 50 trees, 500 meters of hedges, and maintain 100 beehives to support pollination.
The winery is powered by 1,600 m² of solar panels, and rainwater is reused in both vineyard and cellar. Vines are dry-farmed to conserve water. In the cellar, nitrogen from ambient air protects wine from oxidation, and a tangential filter ensures an additive-free, zero-waste process. Wines are aged in top-quality French oak from the Tronçais forest. Lightweight French bottles, recycled packaging, and on-site bottling help reduce their carbon footprint.
